BENEO’s Vital Wheat Gluten are produced during the manufacturing process of bio-ethanol and food-grade starch. All wheat is sourced within Europe and complies with the most stringent quality standards for selection and processing.
First, the wheat kernels are dry-milled to obtain wheat flour. Secondly, it is wet-milled to separate the starch from the protein (gluten). The wet protein is then dried under strictly controlled conditions to ensure that the functionalities of the Vital Wheat Gluten are maintained.
